Preserve goes beyond the “farm to table” concept, paying homage to the art of preserving food through pickling, canning and fermenting. The results are a fresh take on old-fashioned comfort food. There is no walk-in freezer in this kitchen. Instead, you’ll find jars of preserved lemon, fermented cabbage and pepper jelly on the shelves of the open cooking area where the kitchen staff work their magic with whatever ingredients are available from the locally sourced farms with which the Preserve partners.

The definition of “preserve” is to maintain or make lasting. Hopefully, Preserve will be around a long time. But you might want to give it a try before the weather warms, and they open their roll-up windows to the street and the summer crowds. At this restaurant, they preserve everything but reservations
